what you need
- 1 1/2 lb. ground beef (93% lean for core)
- 1 cup oatmeal
- 1 med. onion, diced, divided
- 1 can (10 3/4 oz) tomato soup, divided
- 1 egg
- 1/2 tsp. salt, divided
- 1/2 tsp. pepper, divided
- 6 med. potatoes, peeled and sliced thin
- 1 can (15 oz.) corn

Preheat oven to 375 degrees F. In a large bowl, combine beef, oatmeal, 1/2 the onion, 2/3 of the soup, egg and 1/2 the salt and pepper.
Lightly grease a 9x9 baking dish. Layer the potatoes and rest of the onion and the salt and pepper in two layers. Spoon corn over the potatoes. Evenly spread the meatloaf mixture over the corn. Top with the remaining tomato soup.
Cover with foil and bake for 1 hour. Cool slightly before cutting.
Notes
If you are doing Weight Watchers Core Program, this will fit within the program but only once a day because of the potatoes.
