Angie's Smoked Salmon Spread

what you need
- 3/4 lb. piece smoked salmon (can be found in the fresh meat case)
- 2 pkg. (8 oz. each) cream cheese
- 1/2 cup sour cream
- Juice of one lemon
- 1/2 tsp. kosher salt
- 1/4 tsp. ground pepper
- 1 bunch green onions (scallions), trimmed and thinly sliced
- 1/4 cup fresh dill, chopped

Peel skin off salmon and carefully pick out bones. Break apart into small pieces, and set aside.
Beat cream cheese, sour cream, lemon juice, salt & pepper until smooth. Add salmon, scallions, and dill, then mix by hand to combine.
Refrigerate until ready to serve. This spread is best if made the day before needed. Serve with crackers or lightly toasted bread.
Notes
Do not confuse the smoked salmon with Lox or Nova Lox. Unlike Lox salmon, smoked salmon will be sold in chunk form, with the skin still on the fish. You certainly could use Lox salmon, but I have not tested it with this recipe. We use green onions and fresh dill from our summer garden. This is one of my husband’s favorites!
