what you need
- Vegetable oil
- 1 lb. boneless chicken brest cut into thin strips (approx. 4 breasts)
- 1 1/2 cups Italian Bread crumbs
- 1 packet Italian Salad Dressing Mix
- 2 eggs, beaten

Using a deep frying pan, pour in enough oil to just cover chicken. Heat while prepping the cutlets. Using a paper bag or deep bowl (I find even a large Ziploc bag works well too) combine the bread crumbs and the salad dressing mix. Shake or mix well.
Take a strip of chicken and dip into egg then cover with bread crumb mixture. Repeat until all the chicken is used.
Fry in the oil until cooked thoroughly and let drain on paper towels to remove excess oil.
Notes
Serve with honey mustard or BBQ sauce. They are delicious plain too with a salad or side.
