Easy Thanksgiving Leftover Casserole

what you need
- Butter or margarine
- 1/2 cup onions
- 1/2 cup celery
- 2 cups leftover turkey pieces
- 1 sm. can yams
- 1 sm. bag mustard greens
- 1 can Campbell's cream of chicken soup
- Black pepper, garlic seasoning salt, Emeril's Original Essences
- 1 package cornbread mix

In a small skillet melt butter or margarine then saute onion and celery until tender, should be clear in color.
Combine leftover turkey pieces, canned yams, greens, cream of chicken, sauteed onion and celery, black pepper, garlic seasoning salt, and Emeril's Original Essences to taste. Set aside.
Then mix packaged cornbread according to directions.
Spray large casserole dish with Pam Cooking Oil Spray. Spread turkey mixture into dish and top with uncooked cornbread.
Cook in 350 degrees F oven until cornbread topping is golden brown.
Notes
When I originally found this recipe years ago it took more than an hour to prepare and make. I eliminated a lot of the prep time by using prepared items and it is just as delicious.
