what you need
- 1/2 lb. ground pork
- 1/2 lb. lean ground beef
- 1/2 pkg. Stove Top Stuffing Mix For Pork
- 1 medium bell pepper, 1/2 diced, 1/2 sliced, divided
- 1 pkg. dry onion soup mix
- 1 egg, beaten
- 1 can (6 oz.) tomato sauce, divided
- 1 cup tomato ketchup, divided
- 1 tsp. garlic powder, divided
- 2 tsp. allspice, divided
- 1 Tbsp. brown sugar

Preheat oven to 400 degrees F. Spray glass baking dish with non-stick spray. In large bowl, mix together the ground pork, beef, 1/2 pkg. Stove Top stuffing mix, diced bell pepper, onion soup mix, egg, 1/2 can tomato sauce, 1/2 cup ketchup, 1/2 tsp. garlic powder, and 1 tsp. allspice.
Shape into loaf, place in baking dish and put in oven, bake for 1 hour.
Meanwhile in saucepan on top of stove, add the other half can of tomato sauce, 1/2 cup ketchup, brown sugar, 1 tsp. allspice, and 1/2 tsp. garlic powder. Simmer over med heat until bubbly and hot. During last 20 minutes of baking time, spoon glaze over meatloaf and top with sliced bell pepper.

This recipe can be doubled to serve more or make one for tonight and freeze one for a night when you want a quick fix meal!
