what you need
- 3 large tomatoes, diced
- 1 cup fresh mozzarella, diced
- 10 leaves of basil, diced
- 2 cloves of garlic, crushed
- 2 Tbsp. EVOO (extra virgin olive oil)
- Italian seasoning
- Fresh mozzarella cheese
- 1 box mostaccioli, penne or fusilli pasta
make it
Dice tomatoes, mozzarella, and basil. Crush garlic. Saute garlic in EVOO. Add tomatoes. Add fresh basil. Add Italian seasonings. Let sauce simmer for 5-7 minutes
Boil water and cook pasta 10 minutes; drain. Mix together sauce and pasta. Top the pasta with the mozzarella cheese.
Place under the broiler for 2-3 minutes. Make sure all the cheese is melted.
Notes
Helpful Hint: Cool pasta slightly before serving, or you could scald your family’s mouths.
Buy fresh Roma tomatoes, fresh basil, Italian seasonings, and garlic.
Use good olive oil to saute garlic
Leftovers are great the next day.
