what you need
- 1/2 onion, chopped
- 1 Boca Crumbles Package
- EVOO (extra virgin olive oil)
- 1 can light red beans
- 1 can dark red beans (can use 2 light or dark if you want, variation is just for variety of color)
- 2 cans diced tomatoes
- Chili powder to taste -2 tablespoons or chili seasoning
- Garlic powder
- Salt & pepper
- 1/2 pound pasta (small shapes work best, shells or rotini, etc)
make it
Cook diced onion and crumbles in bottom of a large pot with a bit of EVOO.
Add 2 cans of beans and 2 cans of tomatoes, all undrained. Let simmer for about 5-10 minutes while seasoning to taste with seasoning.
Add pasta and let cook through (liquid from undrained cans is the water it cooks in). Add water or stock to if needed until pasta is covered. Once pasta is cooked, let simmer until desired thickness is achieved, stirring occasionally.
Notes
Great simple recipe using ingredients already in the pantry. Keep these things on hand for a simple meal when there is nothing else to make. Get creative with ingredients, seasonings etc. Make it your own based on what you have in stock in your own kitchen.
Make more or less, it is so easy to cut the recipe on half or double it for a get together. Great to make a lot and freeze for another time.
Thicker Chili Mac can take up to an hour and is great with cornbread. Thinner Chili Mac is great as a stew served in a bread bowl.
