Light and Fluffy Pancakes

what you need
- 2 cups Bisquick
- 1 1/3 cups milk
- 1 egg
- 2 Tbsp. sugar
- 1 tsp. vanilla
make it
Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening.
Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
Cook until bubbles break on surface. Turn; cook until golden. To keep warm, place in single layer on cookie sheet. Cover with aluminum foil, and place in 200°F oven up to 10 minutes.
Notes
Blueberry Pancakes: Stir 1 cup fresh or frozen (thawed) blueberries gently into batter.
Chocolate Chip Pancakes: Stir 1/2 cup miniature semi-sweet chocolate chips into batter.
Half recipe: 1 cup baking mix, 1/2 cup milk, 1 Tbsp. sugar, 1/2 tsp vanilla and 1 egg.
