Black Bean and Shredded Pork Stew

what you need
- 3/4 lb. dried black beans
- 1 1/4 lb. pork chops
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 Tbsp. chopped canned chipotle chilies in adobo sauce
- 1 Tbsp. adobo sauce
- 1 tsp. ground cumin
- Salt & pepper

Combine 6 cups of water (though for a different taste and texture you may want to use half tomato juice), beans, pork, onion, garlic, chilies, sauce, cumin, salt and pepper in a slow cooker.
Cook on low 6 hours.
Remove pork chops and shred, and then add back to the slow cooker. Season with more salt and serve. Top with chopped tomatoes, cilantro and sour cream.
