Tilapia Succotash over Rice

what you need
- 1/2 small onion, chopped
- 3 tsp. butter/margarine
- 3 tilapia fillets, chopped into bite size pieces
- 1 can Margaret Holmes Triple Succotash
- 1/2 tsp. Adobe seasoning
- Salt & pepper to taste
- 3 cups cooked white rice
make it
Chop onion and cook in butter until onion is translucent.
Add tilapia and saute until barely tan.
Add whole can of succotash and seasoning. Cook until most of the liquid is gone (not dry). Serve over white rice. Serve hot.
Notes
Good with a dash of Cajun liquid heat.
Good served with a semi dry white wine.
Good reheated.
