Crazy Awesome Mexican Chicken

what you need
- 3 large chicken breasts
- 1 can cream of chicken and mushroom soup
- 1 can cream of mushroom with roasted garlic soup
- 1 can cream of chicken with herbs soup
- 1 can jumbo black olives, sliced
- 1 can (7 oz.) mushrooms
- 1 can Ro*Tel
- 1/2 white onion, chopped
- Cheese for topping

Preheat oven to 375 degrees F. Season and bake chicken breasts for 45 min. Remove from oven and cut chicken into bite-sized chunks.
Combine remaining ingredients (except cheese) in a bowl with a whisk and pour over chicken in baking dish.
Return to oven for 30 min, uncovered. During last 10 min, sprinkle cheese over top and return to oven.
Notes
Serve with tortilla chips. Guacamole and/or salsa make a great side item.
