what you need
- 1/2 cup fat free sour cream
- 1 can low fat cream of chicken soup
- 2 1/2 cups cooked chicken
- 1 can Mexi-corn, drained
- 1 can Ro*Tel, drained
- 1 1/2 cups low fat shredded Mexican cheese blend
- Taco seasoning, cilantro, salt and pepper to taste
- 1 can refrigerated buttermilk biscuits

Preheat the oven to 350 degrees F. Mix the sour cream and soup in a 13x9 baking dish.
Mix in the chicken, corn, Ro*Tel, cheese and seasoning. Top with biscuits.
Bake for 35 minutes or until the biscuits are golden brown and the mixture is hot and bubbly.
Notes
Serve with taco sauce, or add it to the mixture. A 1/4 cup of chipotles in adobo would be excellent in this as well. Another interesting variation would be to use corn bread topping also.
