what you need
- Filling:
- 1 quart strawberries
- 3/4 cup sugar
- 2 Tbsp. cornstarch
- 1 cup boiling water
- 1/2 pack Jell-O Strawberry Gelatin
- Pie shell
- 1 1/2 cups all-purpose flour
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 1/2 cup oil
- 2 Tbsp. milk

Prepare strawberries by removing the stems and cutting into quarters or smaller pieces. Make filling first. Stir sugar and cornstarch together. Gradually pour the boiling water into the sugar and cornstarch mixture. Continue stirring over med-high heat. Allow to boil while stirring until mixture thickens. Remove from heat and add the Jell-O. Stir well and set whole mixture aside to cool.
While cooling filling mixture make pie shell: Preheat over to 425°F. In a 9" pie plate, mix flour with salt and sugar. Mix gently with a fork. In a mixing cup, mix oil and milk…will make a separate mixture. With a fork, gently mix milk/oil mixture into the flour mix in the pie pan. Once mixed, gently press into the pie plate. Once evenly pressed, bake in oven for 10-12 min. Watch and don't let burn in spots.
Once strawberry mixture is cooled, add in one quart of halved or quartered strawberries. Add the filling to the cooled pie shell. Refrigerate until firm. Serve with Cool Whip or ice cream.
Notes
May add a few drops of almond flavoring to the pie filling to enhance flavor.
