Homemade Chicago Style Pizza Dough

what you need
- 1 package quick rising yeast
- 1 1/3 cups warm water
- 3 cups flour
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 1/2 Tablespoon extra virgin olive oil
- 1/4 cup grated parmesan cheese
make it
Mix yeast with warm water in a small bowl until dissolved. In a separate metal or ceramic bowl, mix flour, sugar, salt, oil, and grated cheese. Add the water and yeast and mix well, forming a large ball.
Preheat the oven on to 300 degrees F. Let it stay at 300 degrees F for 4-5 minutes, then turn the oven off. Open the oven door for 30 seconds. Cover the pizza dough bowl with a wet towel. Put the bowl in the oven and let it rise for 30-45 minutes (make sure the oven has been turned off).
Take the dough out, sprinkle it with a little flour, and “punch” the dough down. Let it rise for an additional 20-35 minutes.
Grease your pizza pan with Pam or olive oil. Spread the prepared dough on the pan and add your toppings. Bake at 450 degrees F for 10-12 minutes. This makes a great deep dish pizza.
