what you need
- 1 can (14 oz.) sweetened condensed milk, divided
- 1 pkg. (16 oz.) semi-sweet chocolate chips (use the brand name, off brand are waxy or have too much chocolate liquor)
- 1 tsp vanilla extract
- 10 oz. white chocolate chips
- 1 teaspoon peppermint extract
- 2 to 3 drops food coloring
make it
Warm up water in double boiler to heated but not bubbling. In top pan combine 3/4 cup sweetened condensed milk with chocolate chips. Keep stirring until all the chocolate is melted. Take off heat, add vanilla.
Spread half of chocolate mixture in the bottom of a greased, foil-lined 8-in square pan. Place pan in freezer. Set remaining mixture aside.
Warm water in double boiler then add remaining evaporated milk and white chocolate chips, stirring until melted. Take off heat, add peppermint extract. It looks very pretty to make half one color and half another (just a few drops).
Notes
Fudge is pretty easy, it only takes a few minutes to make. The hour indicated includes the time to set in the refrigerator. Spread first colored mixture on pan, and then return to freezer for 5 minutes. Spread second colored mixture on first. Return to freezer for second color to set. Then add remainder of chocolate mixture. Spread on top of peppermint layer and return to freezer to set. Once the final chocolate layer is set, cut into 1 inch squares. Store in refrigerator.
