Spicy Asian Beef with Jasmine Rice

what you need
- 2 bags (3.5 oz. each) jasmine rice, uncooked
- 2 Tbsp. minced garlic
- 1 Tbsp. minced fresh ginger
- 1 tsp. ground coriander
- 2 Tbsp. vegetable oil
- 1 lb. flank steak, thinly sliced
- 1 medium-size red bell pepper, chopped
- 2 serrano chiles, seeded and minced
- 3 Tbsp. brown sugar
- 1 Tbsp. soy sauce
- 3 Tbsp. shredded fresh basil
make it
1. Prepare rice according to package directions. Keep warm.
2. Saute garlic, ginger, and ground coriander in hot oil in a skillet over high heat 30 seconds. Add flank steak, and stir-fry 5 min. Add bell pepper and next 3 ingredients; stir fry 1 min.
3. Remove from heat, and stir in basil. Serve over warm rice.
Notes
Great for parties too, as lettuce wraps!
2 heads Bibb lettuce
1/2 cup chopped peanuts
2 limes
Spoon rice and stir-fry mixture evenly onto lettuce leaves; roll up. Garnish with chopped peanuts and lime wedges, if desired.
