what you need
- 2 cups cake flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 2 eggs
- 2 cups buttermilk
- 1 tsp. vanilla
- 2 Tbsp. butter, melted
- 1/4 cup low-calorie pancake syrup
make it
Combine dry ingredients, blend well with whisk. Beat eggs, buttermilk and vanilla in large bowl. Add butter, syrup and dry ingredients. Beat just until blended. Do Not Over Mix. Let batter rest 20 min.
Preheat griddle until water drops sizzle. Pour batter onto griddle with 1/4 cup measuring cup. Cook until bubbles form, turn and cook until golden.
Place in single layer on cookie sheet to freeze. Then place in Ziploc bag. To reheat: microwave 3 pancakes 2 min on PWR 4.
