what you need
- 4-6 boneless skinless chicken breasts
- 2 cans cream of chicken (or mushroom) soup
- 2 containers (16 oz. each) sour cream
- 2 Tbsp. poppyseeds
- 1-2 rolls Ritz Crackers
- 1/2 stick butter (approx.)
make it
Start by cooking the chicken in a 10-inch skillet. You can either cook them whole or cut them up, however your family likes it. While your chicken is cooking, preheat your oven to 350 degrees F and start preparing your sauce and topping.
Take the cream of chicken soup and the sour cream, mix. Stir in poppyseeds and set aside.
Crush the rolls of crackers and get them as fine as you can. Melt the butter in the microwave and stir in the crackers until crumbly and mixture starts to stick together.
When the chicken is done, combine with the sour cream mixture and pour into 13x9 baking dish. Top with cracker mixture.
Bake 30-35 minutes or until topping is golden and edges are bubbly.
Notes
I always serve with white rice and green bean casserole. Very filling!
For half recipe, bake in 8x8 or 9x9.
