what you need
- 1 1/2 lb. meatloaf combo chopped meat (beef, veal, pork)
- Celery salt (to taste)
- Black pepper
- 1 small red onion
- 1 green pepper
- 1 red pepper
- 3-4 pieces sundried tomato
- 1 egg, lightly beaten
- 1 package McCormick’s Meatloaf Mix (plastic bag included)
- Bread crumbs (plain or Italian blend)
- 1 cup shredded cheddar cheese (or any cheese of your choice)
- 1 small can tomato paste (plain or seasoned)

Combine your chopped meat combo together in a large mixing bowl. Add your celery salt and black pepper. Set aside. Cut up 1/2 of your red onion (or more), peppers & sundried tomatoes. Add it into your meat and mix well so it is all distributed evenly throughout the meat. Add in one egg lightly beaten and your meatloaf mix. Mix together well. Add some bread crumbs a little at a time until the meat is solidly formed.
Once the meatloaf is formed to your liking, cut open the top of the meatloaf and butterfly it. Fill the open part up with the shredded cheese and close back up well so it looks like it did before it was cut open. Take your tomato paste and rub it on the meatloaf thick and evenly on the top and sides. Make sure it is all covered. Place the meatloaf into the bag provided for you in the meatloaf seasoning mix package and tie shut, taking the air out of the bag.
Put into the oven at 350 degrees F for 1 hr. 10 minutes. The meatloaf will be nice and tender (and hot so be careful). Remove from the bag, slice up, serve and enjoy it greatly!! It is KICKIN!!!!!!!!
Notes
A good vegetable suggestion for this is a nice garlic butter asparagus. Boil up your asparagus for about 12-15 minutes. Melt down about 1/2 stick of butter, add in some garlic powder. Drain your asparagus and put back into the pot. Pour the garlic butter over the asparagus and put on a low simmer for about 7-10 minutes. Serve it up and enjoy it.
