- Peanut Butter Fudge Sauce (makes 2-1/2 cups)
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1/2 cup heavy cream or whipping cream
- 1 cup semi-sweet chocolate chips
- 4-5 boxes store bought ice cream sandwiches (enough to fit your dish)
- 1 large (or 2 small) tubs Cool Whip, thawed
- 1 recipe peanut butter fudge sauce
- 1 cup salted peanuts
- 1 jar maraschino cherries (optional)

In a 2-quart bowl (microwaveable), combine corn syrup, peanut butter and cream. Microwave on HIGH for 1-1/2 minutes, until boiling. Add chocolate chips and stir until chips are melted. Allow to cool to room temperature.
Fill bottom of a 9 x 13 inch dish with ice cream sandwiches. Spread half of whipped topping over the sandwiches. Drizzle with half of the Peanut Butter Fudge Sauce. Top with half of the peanuts. Repeat layers.
Freeze until firm, or at least 1 hour. Let sit 20 minutes before cutting into squares to serve.
