what you need
- 1 box Stove Top Stuffing For Pork
- 1/2 cup milk or half-and-half
- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 1 bunch parsley, stems removed, chopped coarsely
- 1 teaspoon dried thyme
- 2 lb. 80/20 ground beef or chuck
- 1 lb. bulk country sausage (sausage with sage is preferred)
- 1 can (14 oz.) tomato sauce for meatloaf

In a medium bowl pour milk over stuffing mix. Mix. Saute onions, celery, carrots, parsley, thyme until vegetables are softened. Adding color here adds depth of flavor to the final product. With your hands combine all ingredients except the tomato sauce thoroughly.
Turn into an 11 3/4x5 1/2x3 1/4 inch aluminum loaf pan. Spread tomato sauce over the top. Cover with aluminum foil.
Bake in 400 degrees F oven until internal temperature measures 160-165 degrees.

Use a disposable aluminum foil loaf pan. After the loaf is removed from the oven place pan in a 13x9x2 cake pan. Poke small holes with the tip of a knife around the base of the loaf pan allowing the fat to drain off. Discard fat, remove meatloaf from loaf pan onto serving dish.
