Teel Elite Beef & Chicken Enchiladas

what you need
- 1 lb. ground beef
- 1 package taco seasoning
- 1 bottle (16 oz.) light beer, divided
- Fajita seasoning to taste
- Paprika to taste
- Ground allspice to taste
- 1 boneless skinless chicken breast
- 12-14 tortillas
- 2 packages shredded cheese (we used Kraft Monterrey Jack & Colby)
- 2 cans enchilada sauce
make it
Brown ground beef with taco seasoning, 1/2 of light beer, and taste of seasonings. Bake chicken breast with remaining light beer and seasonings until almost completely cooked. Cube/dice chicken breast. Mix chicken and ground beef together.
Fill each tortilla with shredded cheese and meat combination and roll up. Place each enchilada in a 13x9 glass baking dish. Cover enchiladas with remaining cheese and enchilada sauce. Sprinkle seasonings to taste.
Bake at 325°F for 12-15 minutes or until cheese is melted and chicken is done. Serve and enjoy!
Notes
Substitutions: Any meat choice can be used (for example: shrimp, beef only, chicken only, pork, etc). Enchilada sauce can be substituted for sour cream sauce, chipotle ranch, queso, or chili.
