what you need
- 5 boneless skinless chicken breasts, cut into bite size chunks
- 3/4 cup Kraft Zesty Italian Dressing
- 10 cups chicken broth, divided
- 2 celery stalks, sliced
- 3 large carrots, sliced
- 1 medium onion, chopped
- 3/4 cup chopped fresh parsley
- 1 Tbsp. fresh thyme leaves
- 6 cups uncooked medium egg noodles
make it
Marinate the chicken with the dressing for 1/2 hour. Cook the chicken in a large stockpot or Dutch oven until brown on all sides. Add 3 cups of the broth.
While this is cooking you can prepare the vegetables. Add the vegetables, herbs and the remaining broth. Cook on medium heat until vegetables are tender, about 20-25 min.
Bring to boil, add noodles and cook until tender. Serve.
Notes
Wonderful for the upcoming colder months and when everyone in the house has a cold!
Keep extra broth on hand if the noodles soak it all up. I used broth sold in cartons, since I didn't have any homemade.
Really good with warm crusty garlic cheese bread.
