what you need
- 1 1/2 cups sugar
- 2 cups flour
- 3/4 tsp. baking soda
- 1/4 cup cocoa
- 1 tsp. salt
- 2 cups grated zucchini
- 1/2 cup oil
- 2 tsp. vanilla
- 1/2 cup nuts (optional)
make it
Sift together sugar, flour, soda, cocoa and salt. In a blender, blend zucchini, oil, vanilla and nuts until smooth and creamy. Pour into dry ingredients and mix until blended.
Pour into a greased and floured 10x13 pan.
Bake at 350°F for 20-30 min.
Notes
I use a dark metal pan..and the time is 25 minutes in a gas oven..perfect everytime..you can use a smaller pan and increase your baking time.
