what you need
- 1 cup brown rice, uncooked
- 1 can cream of chicken soup
- 1 cup heavy cream
- 1 envelope dry dressing mix, Italian or ranch
- 2 cups boiling water
- 2 1/2 lb. boneless chicken breast, cut into 1" pieces
- Salt & pepper to taste
make it
Wash and drain rice. Spread rice in 9 x 13 baking dish.
Mix soup, cream, dressing mix and water. Stir into rice. Lay chicken on top of rice mixture. Season with salt & pepper.
Cover tightly with foil and bake for one hour at 350 degrees F. Uncover and cook 20 minutes longer; until most of the liquid is absorbed and rice is tender. Put under broiler for a few seconds to brown chicken if desired.
Notes
Serve with cooked peas and crusty bread.
