Sherry's Holiday Cherry Chicken Salad

what you need
- 1 cup orange juice
- 1/2 cup dried cherries
- 4 cups chopped Louis Rich Carving Board Chicken Strips
- 1/3 cup Kraft Reduced-Fat Mayonnaise
- 1/4 cup Breakstone's Reduced-Fat Sour Cream
- 2 tsp. fresh tarragon
- 1 tsp. orange rind
- 1/2 tsp. salt, divided
- 1/4 tsp. black pepper
make it
Bring juice and cherries to a boil in med saucepan over med-high heat. Reduce heat, simmer, stir occasionally, 10-12 min or until liquid is reduced to 1/4 cup. Remove from heat and cool slightly.
Pour mixture into large bowl. Stir in chicken and remaining ingredients, toss to coat.
Cover and chill at least 2 hours.

This is a beautiful salad for Thanksgiving or Christmas. Serve with fancy crackers.
