what you need
- 1 large eggplant, peeled, coarsely chopped
- 1 medium tomato, coarsely chopped
- 1 red bell pepper, coarsely chopped
- 1 medium onion, coarsely chopped
- 1 medium-sized zucchini, coarsely chopped
- 3 Tbsp. olive/canola oil mix, divided
- 1 pkg. (14 oz.) prebaked Italian pizza crust
- 2 cups Kraft shredded reduced-fat mozzarella cheese
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper

Heat a large skillet over med-high heat, and saute all veggies in 1 Tbsp. oil for 10 minutes or until tender.
Layer pizza crust evenly with cheese and eggplant mix. Sprinkle with basil and next 5 ingredients, drizzle with remaining 2 Tbsp. oil.
Bake in preheated 425 oven for 10 min or until golden.

I love the blending of flavors from the veggies and herbs.
Great healthy pizza, especially when you use whole wheat crust like I do.
