Simple Slow Cooker Chicken Enchiladas

what you need
- 5 large chicken breasts
- 1 pkg. (8 oz.) cream cheese
- 1 can green chilies
- 2 cans enchilada sauce (you can use either the red or green chilie sauce), divided
- Chopped onion (optional)
- 8 tortilla shells
- 8 oz. cheddar cheese
make it
Cook chicken in slow cooker until very tender (4-6 hours).
Shred chicken and mix with cream cheese, green chilies, and 1 can enchilada sauce. Divide mixture and fill 8 tortilla shells. Pour 1 can enchilada sauce over shells & sprinkle with cheese.
Bake 375°F for 20 minutes.
Notes
You can make this a day ahead and then bake an extra 5 minutes.
