Sherry's Maple-Ginger Glazed Carrots

what you need
- 4 lb. carrots, cut diagonally into 1/4-inch-thick slices
- 1/4 cup water
- 1 Tbsp. fresh grated ginger
- 3 Tbsp. butter, divided
- 1/3 cup pure maple syrup
- 1 Tbsp. cider vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Chopped parsley for garnish

In large saucepan or 5-quart pot, combine carrots, water, ginger and 2 Tbsp. butter. Cover, cook on medium heat for 10 minutes or until liquid has evaporated and carrots are almost tender.
Add maple syrup, vinegar, salt and pepper. Heat to boiling on med-high heat. Boil 8-10 minutes or until syrup is thick and carrots are tender and coated with glaze. Stir frequently.
Remove pan from heat, stir in remaining 1 Tbsp butter. Spoon carrots into serving bowl and garnish with parsley.
