Sherry's Holiday Rosemary-Maple Turkey

what you need
- 2 Tbsp. each of chopped fresh rosemary, and thyme
- 1 Tbsp. lemon zest
- 1/4 cup lemon juice (more as needed)
- 1 shallot, peeled and diced
- 1 Tbsp. butter
- 1/2 cup pure maple syrup
- 1 Tbsp. Grey Poupon Mustard
- 1 whole turkey (13 lb.)
- 1 large apple, cored and quartered

Preheat oven to 350°F. In bowl, combine rosemary, thyme, lemon zest and lemon juice.
In hot skillet, cook shallots in butter for 2 min. Add syrup and mustard. Bring to boil, cook 1 min. Stir constantly. Stir in 2 Tbsp. herb mixture. Spread 1/2 remaining herb mix under turkey skin and remainder in cavity with apples. Tie legs back with twine. Place on rack in roasting pan.
Roast 2 hours, 30 minutes. Brush with syrup mix after 2 hours.
