what you need
- 2/3 cup whole wheat flour
- 2/3 cup unbleached all-purpose flour
- 1/3 cup cornmeal
- 1 Tablespoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 2 cups nonfat plain yogurt
- 3/4 cups fat-free egg substitute
- 2 Tablespoons canola oil
- 1 apple, peeled, cored, and grated
- Pecans (optional)

In a large bowl, combine everything (except the apple and pecans) until blended. Fold in apple.
Coat a large nonstick skillet with nonstick cooking spray and heat over medium heat. Spoon 2-3 tablespoons of mix into skillet and cook 2 min or bubbly on surface and around edges. Flip and cook until lightly browned (2minutes). Repeat with remaining batter.
Top each serving with 2 tablespoons of pecans, if desired.
Notes
