Herry's Holiday Butterscotch-Crunch Pancakes

what you need
- 2 cups heart-healthy all-purpose baking and pancake mix
- 1-1/4 cups low-fat buttermilk
- 1 egg
- 2/3 cup low-fat granola
- 5 Tbsp. chopped pecans, divided
- 5 Tbsp. butterscotch flavored baking chips, divided
- 4 Tbsp. prepared low-fat caramel sauce

In bowl, combine baking mix, buttermilk and egg. Stir in granola, 2 Tbsp. pecans and 2 Tbsp. butterscotch chips.
In greased skillet over medium heat, pour 3 Tbsp. batter, cook 2 min or until edges bubble, flip, cook 2 more min or until golden. Repeat with remaining batter.
Arrange pancakes on plate, Divide remaining pecans and butterscotch chips evenly among plates, top with caramel sauce.
