what you need
- 1.5 lb. hamburger meat
- 1 can nacho cheese soup
- 1 pkg. taco seasoning
- 1 can diced tomatoes
- 4 cups rice, cooked
- 1 can black or pinto beans, drained
- 1 can corn, drained
- 8 oz. shredded Mexican cheese
make it
Brown and drain hamburger meat. Add in soup, taco seasoning, and tomatoes.
In a 9x13 baking dish, layer rice, beans, corn, meat mixture and top with shredded cheese.
Bake at 350 degrees F for 25-30 or until cheese is melted and golden.
Notes
Serve with sour cream and tortilla chips. Can be made with leftover taco meat. Also good with chicken instead of hamburger.
