what you need
- 1/4 cup flour
- 2 lb. stew beef or pork (cubed)
- 2 Tbsp. olive oil
- 5 cups Swansons low sodium beef stock
- 1 jar (15 oz.) Taco Bell Chunky Salsa
- 1 pkg. French's brown gravy mix
- 1 cup water
- 1 Tbsp. dried minced onion
- 2 tsp. garlic powder
- 1/2 tsp. black pepper
- 2 tsp. curry powder
- 1 bag Green Giant frozen stew vegetables
- 1 cup Green Giant frozen zucchini
- 1 cup Green Giant frozen butternut squash
- 1 cup Green Giant frozen spinach
- 1/4-1/2 cup potato flakes (optional as thickener)

Coat cubed meat in 1/4 cup flour. In a large Dutch oven, heat oil, add meat and brown on all sides.
Add Swanson beef stock, Taco Bell Chunky Salsa, French's brown gravy mix and water, stir well. Add seasonings and frozen vegetables.
Bring to boil, then reduce heat and simmer for 2 1/2 - 3 hours until vegetables are tender. If you prefer thicker sauce, stir in 1/4-1/2 cup potato flakes.
Notes
An African twist on an old favorite. Delicious with cornbread.
