what you need
- 1 fresh or frozen pizza dough
- 1/4 cup olive oil
- 1 small onion, chopped
- 3 cloves garlic, chopped
- 1 lb. fresh mushrooms, sliced thin, divided
- 1 bag baby spinach, divided
- Salt & pepper
- 1/4 cup gorgonzola cheese
- 1/4 cup feta cheese
- 1 bag (8 oz.) Kraft Shredded Mozzarella Cheese
- 2 or 3 small tomatoes
- 1/2 cup fresh chopped basil (approx.)
- 1/4 cup grated parmesan cheese (approx.)

Preheat oven to 425°F. If frozen dough, let rise a few hours. until totally soft. (Can be defrosted in refrigerator or on plate in kitchen (put on plate and rub some oil on top of dough to keep soft). Put towel on top and let rise until double in size.
Meanwhile, saute in olive oil, onions and garlic until soft but not brown. Throw in 1/2 of the mushrooms and cook those down a little. Put in half bag spinach and cook down. Mix it up well. Salt and pepper everything in pan.
Spread dough on oiled pizza pan till thin. Brush olive oil on top of dough and put into preheated oven for 5 min.
Remove and spread spinach mixture on top of pizza dough. Spread gorgonzola and feta on top. Shake 1/3 bag of mozzarella on top. Next put rest of spinach and mushrooms (uncooked) on top of cheese. Add sliced tomatoes, basil, salt/pepper, rest of mozzarella and parmesan cheese. Bake for about 15 min. until all cheese is melted and bottom of dough is light brown.
Notes
Pizza pan can be round or square but pizza will taste better if it is a thin pizza. Everything will cook down so don't be surprised if it looks real high.
