what you need
- 1 Boc Choy Acorn Squash, softened and scooped*
- 1 package Idahoan Loaded Baked Mashed Potatoes
- 2 cups boiling water
- 2 tablespoons Land O Lakes Butter
- Salt and pepper to taste
make it
Cut Boc Choy Acorn Squash in half, scoop out seeds and strings and place upside down in a low baking dish with 1/2 inch of water. Bake at 400 degrees F for 45 minutes. Scoop out pulp and Set aside.
Meantime put 2 cups of boiling water in a bowl. With a fork mix in the potatoes from the packet, stir well.
Add the pulp from the Acorn Squash, mix well. Add the Land O Lakes Butter. Add the salt and pepper.
Notes
I was not sure I would like squash, but I needed more healthy vegetables so I decided to create this. 3/4 cup is about 95 calories. I found I really liked it...
