what you need
- 1 lb. cubed chicken or turkey breast
- 1 Tbsp. ground ginger
- 1/4 tsp. garlic powder
- 2 Tbsp. cornstarch, divided
- 3 1/2 Tbsp. soy sauce, divided
- 1 lb. fresh broccoli
- 1 can water chestnuts, chopped
- 1 onion
- 4-5 carrots
- 2 Tbsp. peanut oil
- 1 1/2 cups water
- 1/2 cup peanuts
- 8 cups hot cooked rice

Mix chicken, ginger, garlic powder, 1 Tbsp. cornstarch, and 1 1/2 Tbsp. soy sauce. Set aside. Chop broccoli, chestnuts, and onion. Slice carrots diagonally.
Stir fry chicken in 2 Tbsp. peanut oil until browned. Add vegetables and stir fry 2-3 minutes.
Mix water, remaining soy sauce and cornstarch and add to pan. Cover and cook 5-8 minutes. Add peanuts and serve over rice.
