Feta Chicken Spinach Casserole

what you need
- 4 boneless skinless chicken thighs
- 1 package (10 oz.) chopped frozen spinach (thawed and squeeze all water out)
- 1/2 cup mayonnaise
- 1-2 garlic cloves, minced
- 1 pkg. (6 oz.) feta Cheese, crumbled
- Salt (optional)

Chop chicken into bite size pieces.
Mix all the above ingredients together.
Cook on 350°F until done, approximately 30 minutes. *Stir after 15 minutes and cover with foil.
Notes
You may add additional mayo if it looks dry. I double the recipe because my kids love to eat leftovers. They say it is even better the following day.
When doubling the recipe, I use a 7 x 13 baking dish. I don't measure the ingredients. I use enough mayo until it looks moist. My kids like more spinach than chicken. Therefore, I do not double the chicken.
My 12 year can make this dish by herself.
When I'm in a hurry I use leftover rotisserie chicken.
