what you need
- For the dressing:
- 1/4 cup olive oil
- 2 tablespoons white vinegar
- 1 teaspoon salt
- 1 teaspoon basil
- 1/2 teaspoon black pepper
- 1/4 teaspoon oregano
- For the Salad:
- 1 pound tofu, cut into cubes
- 3 fresh tomatoes, cored and cut into wedges
- 3 cucumbers, thinly slivered
- 1/2 large red onion, chopped
- 1/2 cup black olives
- 1 head romaine lettuce, washed and dried
make it
1. Mix dressing ingredients together and pour over the tofu. Marinate for at least 1 hour.
2. Add tomatoes, cucumbers, onion, and olives to the tofu. Toss.
3. Serve on the romaine lettuce.
