what you need
- 1 whole broiler chicken (about 4 lb.) cut into pieces
- Salt & pepper
- 1 Tbsp. olive oil
- 1 onion, chopped
- 1 green pepper, seeded, diced
- 2 minced garlic cloves
- 4 slices prosciutto di parma, chopped
- 1 can (14.5 oz.) diced tomatoes with Italian herbs
- 1/2 cup country-style olives
- 1 Tbsp. fresh basil, chopped
- 1/2 tsp. dried rosemary
make it
Season chicken with salt and black pepper. In skillet over med-high heat, cook olive oil for 30 seconds. In 2 batches, cook chicken pieces 8 min or until browned on all sides. Remove chicken, set aside. Remove, discard all but 2 Tbsp. pan drippings.
In same skillet over med-high heat, cook onions, peppers and garlic in reserved drippings. Stir in prosciutto, tomatoes, olives, basil and rosemary, return chicken to pan.
Reduce heat to medium, cover, let simmer 40 min., baste occasionally.
