Santa Maria Style BBQ Pinquito Beans

what you need
- 1 lb. pinquito bean, dried
- 6 slices bacon, diced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 5 cloves garlic, minced
- 1 bouillon cube
- 1 Tbsp. liquid smoke
- 1/2 - 3/4 cup BBQ sauce
- Sea salt
- Cracked black pepper

Pick over beans to remove dirt and small stones and rinse in colander; place beans into Dutch oven and cover with enough water. Let soak overnight.
Drain and cover beans with fresh water and simmer for 2 hours or until tender (check beans and add water as needed).
Chop bacon, bell peppers, onions and garlic; add to beans.
Take a ladle full of bean juice and put in small custard dish along with bouillon cube; let sit until it can be mixed thoroughly. Cook for another hour.
Add liquid smoke and BBQ sauce. Season with sea salt and pepper to taste; continue cooking for another 45 minutes to 1 hour.
