what you need
- 8 Roma tomatoes, seeded and diced
- 7 vine ripe tomatoes, seeded and diced
- 3 teaspoons salt, divided
- 1-1/2 cups finely diced red onion
- 12-1/2 Serrano chiles, seeded and finely chopped (small); 8-10 medium; or 6-7 large
- 1/4 cup chopped fresh cilantro (loose)
- 1 tablespoon and 2 teaspoons lime juice
- Tortilla chips or scoops

In a colander or strainer place the tomatoes and put colander on top of a bowl or pot to catch the water coming from the tomatoes. Add 2-1/2 tsp. salt and stir and let sit for at least one hour.
In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, remaining salt, and lime juice.
Chill for one hour in the refrigerator before serving.
Notes
If you really like cilantro, you can add more to your taste.
