what you need
- 1 1/2 cups brown rice
- 1/2 cup chopped parsley
- 1/2 cup chopped yellow onion
- 1 can (15-ounce) garbanzo beans, rinsed and drained
- 1 can (15-ounce) dark kidney beans, rinsed and drained
- 1/4 cup olive oil
- 1/3 to 1/2 cup rice vinegar, according to your taste
make it
Cook rice according to package. Cool to room temperature.
Stir in the remaining ingredients.
Chill 2 hours or longer.
Notes
The original recipe called for raw uncooked brown rice. You would have to cook rice for 45 to 50 minutes. This way is simpler and just as healthy, using either Minute Rice or the cooking pouches now on the market.
