Grilled & Glazed Peachy Chicken

what you need
- 1 Tbsp. vegetable oil
- 1/2 cup minced onion
- 1 jar (12 oz.) peach preserves
- 1/3 cup Dijon or yellow mustard
- 2 tsp. grated peeled ginger root
- 6 (5 oz.) boneless skinless chicken breast halves
make it
Saute onion in oil in small saucepan. Stir in preserves, mustard and ginger. Simmer 5 minutes. Reserve 3/4 cup for dipping.
Grill chicken over medium direct heat for 10 minutes or until no longer pink in center, turning and basting often with remaining sauce.
Serve chicken with reserved sauce for dipping.
Notes
Variations: Glaze is great on pork chops or shrimp. Apricot preserves may be substituted for the peach.
