what you need
- 1 1/2 cups ricotta
- 1/2 cup grated cheese
- 1 green onion, finely chopped
- Salt & pepper
- 4 whole roasted red peppers
- Pesto sauce
make it
1. Combine ricotta, grated cheese, onion, salt & pepper until fluffy.
2. Roast peppers and remove skin.
3. Stuff peppers with cheese filling after cooled. Top with pesto sauce.
Notes
Serve over rice or pasta or serve plain.
