Niccis Quick Kitchen Chicken

what you need
- 2 Tbsp. salted butter
- 2 Tbsp. flour
- 1/2 cup half-and-half
- 1 brick (8 oz.) mild cheddar cheese, cubed
- 3-4 boneless skinless chicken breasts
- Pinch of salt and pepper
- Pinch of granulated garlic
- 1/2 cup grape tomatoes, cut in half lengthwise

Preheat oven to 400°F. In medium saucepan melt butter over low heat then add flour and whisk together to form a roux. Slowly add the half-and-half while continuing to whisk. Once blended, add the cheddar cheese, stirring constantly cook over low heat until cheese is melted and a thick sauce is formed, remove from heat.
Place the chicken breasts in a glass pan sprinkle with salt, pepper and granulated garlic. Top with the melted cheese mixture and sliced grape tomatoes.
Bake in oven for approx 45 minutes or until no longer pink and cooked through.
Notes
I added a bit of garlic flavored bread crumbs to the top of this dish halfway through cooking to add a bit of texture.
I served this over a bag of garlic rice that you cook in microwave for 90 seconds.
This was a very simple dish to make that was also delicious. and the kids loved it!
