what you need
- 1 jar Greek dressing, divided
- 1 lb. boneless chicken breasts
- 1 cup frozen peas
- 20 oz. FRESH 3 cheese tortellini
- 2 Tbsp. reduced fat crumbled feta cheese
make it
Use a gallon-sized Ziploc Bag to marinade the chicken in 1/2 the jar of Greek dressing. Zip bag and tenderize without causing damage to bag. Put in fridge for a couple of hours.
Take chicken out of fridge, throw away the marinade, and slice chicken into bite-sized pcs. In a large skillet, coat with olive oil, and add 1/2 the remaining Greek dressing. Heat on med-high heat, add chicken. Let cook about 10 minutes (dressing is at a good "boil"). Add frozen peas, let cook an additional 5 - 7 minutes. Remove from heat and cover with tight-fitting lid.
Cook tortellini to package directions. Drain, place in large bowl. Add chicken/pea mixture. Mix well, sprinkle with feta cheese and serve.
