what you need
- 1 cup dry oats
- 1 cup plain yogurt
- 1 1/2 cups sugar
- 1/2 cup brown sugar
- 1 egg
- 1/3 cup melted butter
- 1 Tbsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- Pinch of salt
- TOPPING: 1 cup light brown sugar, blended with 1/2 cup sugar
- ICING: 1 pkg. PHILADELPHIA CREAM CHEESE
- 1 cup powdered sugar
- 1/2 tsp. vanilla
make it
Stir oatmeal and yogurt together until oats are wet. Let stand for about 5 minutes. Add sugars, egg, and butter. Mix well. Add all the dry ingredients and mix thoroughly.
Spoon into well-greased muffin tins. Sprinkle with topping.
Bake at 375°F for 20-25 minutes. While baking, blend cream cheese with powdered sugar then add vanilla. Add a little water if too thick. Drizzle or pipe over muffins once cooled.
Notes
I use whole wheat flour when making these. I think it makes a difference with the taste.
