what you need
- 2 lb. ground beef
- 1 envelope instant onion soup mix
- 1 cups cracker crumbs
- 2 eggs
- 1 cup Ketchup (1/2 cup reserved)
- 1/2 cup water
- Opt. 1 cup chopped red and/or green peppers
make it
Preheat oven to 400 degrees F. Prepare 2 meatloaf pans (I place a cookie rack in the bottom of a 9x13 cake pan and line foil over top of cookie rack and up the sides. Then I cut small holes all through the foil so the fat drains under the cookie rack and away from the meatloaf. You can even line the pan under the cookie rack, with foil to make easier cleanup)
In large mixing bowl, mix together all ingredients except for the reserved ketchup (I often use a little more than the recipe calls for anyway). You will have to use clean hands to mix it well. Place mixture in pan and shape into loaf.
Cover with foil and bake for 40 minutes. Uncover and top with reserved ketchup. Bake for 10 more minutes.
Notes
Before I put the mixture in the pan, I take out 2 handfuls, make balls out of each of them and place in a sandwich bag. I then freeze these two portions. Later, I will half a green pepper and remove the seeds, place a frozen portion in each half and bake for 40 minutes. Then I add a Tbsp. of ketchup and a slice of American cheese on top of each and bake for 10 more minutes. This is a perfect stuffed pepper lunch for my husband and I on weekends when the kids are gone. :)
