what you need
- 1 pkg. (8 oz.) Philadelphia Cream Cheese, room temperature
- 1/3 cup Kraft Shredded Cheddar Cheese
- 4 large jalapeño peppers, seeded and diced
- 3 boneless skinless chicken breasts
- 6-12 slices Oscar Mayer Center Cut Bacon
- 1 pkg. Kraft Fresh Takes Cheddar Jack Bacon Breadcrumb Cheese Mix
make it
Preheat oven to 400 degrees F and line cookie sheet with parchment paper.
In a small bowl, combine cream cheese, cheddar cheese and diced jalapeño peppers. Set aside.
Take each chicken breast and butterfly them, separating into 6 breast halves. Pound each out until they are about 1/4 inch thickness.
Divide mixture into 6 portions and spoon into each chicken breast. Roll chicken up and wrap with 1-2 slices of bacon. Use toothpicks as needed.
Coat each piece of chicken with the cheese crumb mix and place on sheet.
Bake for 30-40 minutes, turning halfway through cooking time.
Notes
Unless you are making your own bread crumbs for the coating, I would avoid salting the chicken. The packet is salty enough on its own.
